Snapshots that I love

We've been REALLY slow on the blogging side the last couple of weeks!  Sorry about that... It has been quiet a emotional few -

We were filled with sadness, loss of a loved one - We've been blessed with special moments shared between close family - We've been beyond excited, for the new adventures of other super relatives.  We squeezed in a holiday.  Had a really fantastic time catching up with a best friend - and to top it off the last three days was spent with the brother-in-law-wife-and blue-eyed-daughter, priceless. This weekend is going to be jam-packed with more family and friends!  Spare a thought for us!  In between all of this there is WORK,work,WORK, food, diapers, wine,  dishes!

Even more in LOVE!

Happy Birthday blackPEPPER!

Recipe by Beantown Baker

What you'll need:

113g unsalted butter, at room temperature
1 cup milk
2tsp vanilla extract
2 1/4 cups flour + 2tbsp for the Oreo chunks
1tsp baking powder
1/2tsp salt
1 2/3 cup sugar
3 large egg whites, at room temperature
2 x boxes Oreo Cookies

Oven 180 degrees Celsius
Insert cupcake liners into a muffin pan
Twist apart 24 Oreos.  Place the wafer with the cream on it, filling side up at the bottom of each paper liner.
Crush the remaining halves to use as decorations.

Cut the remaining Oreo cookies into quarters with a sharp knife.
Toss with 2tbsp of flour and set aside.
In a large bowl cream the butter, add the milk and vanilla, mix to combine.
In a separate bowl mix together the flour, baking powder and salt.
Add the dry ingredients to the butter mixture, combine.
Stir in the sugar, beat with a mixer on low for 30 seconds, then on medium speed for 2 minutes.  Stir in the quartered Oreos.

Fill the cupcake liners 3/4 full.  Bake for 20 minutes, until a toothpick comes out clean when inserted in the middle.
Leave to cool.

Whipped cream cheese frosting:
300g cream cheese
300ml cream
1tsp vanilla extract
200ml sugar

Whip the cream in a large bowl.  Mix cream cheese, icing sugar and vanilla in another bowl.
Mix everything together, whip until smooth.
If the frosting is too runny place in the fridge until firm.

Yummy!
Here's to the next year of blogging!
Both thumbs up!

A little out of nothing

For starters:  blackPEPPERcafe will celebrate its first anniversary on 18 April, thus the new birthday suit!!! YAY
Check in again on the 18th to grab a bite from the lovely birthday cupcakes we'll be serving!

Another milestone in our short lived farm lifestyle:
The renovation of our honeymoon suite.

The space was used for storage for sometime now, so we had to sort, chuck, clean, paint and decorate.
It is now ready to be utilized as our guest bedroom.

We've decided to paint the entire room and en-suite bathroom a crisp white.
Furnished it with a few antique pieces we've collected over the years, and kept it uncluttered and simple.
Just as we imagined our new life to be!

Another resolution ticked from our list!
*Yeah*
