Mozzarella & Maple Syrup French Toast


I am fortunate enough to have a husband, whom is also a fantastic  self-taught chef.  He usually surprises us both on a weekend morning with one of his genius inventions, may I say: "They are indeed DELICIOUS". 

What you'll need:

250g bacon, fried
3 x XL eggs
4 x slices Low GI White Bread
1tbs butter
Dash of milk
Mozzarella Cheese shavings
Maple Syrup 
salt & blackPEPPER

Blend the 3 eggs, milk, salt & pepper into a mixing bowl.
Pour the mixture into a shallow dish, place the slices of bread into the dish to soak.
Meanwhile, heat the butter in a frying pan, fry the slices one at a time, turning it over when browned.

Cut them diagonally to form triangles, stack them with pieces of bacon and mozzarella.
Drizzle with Maple Syrup...

Serve warm with a glass of ice-cold whole milk!
