Delicate Delight

Wednesday = Baking Day on the farm
I did not have time to capture the entire process of making this shortbread,  due to the preparation of rusks, and us baking a whole lot of delicious chicken-pies simultaneously,  but nevertheless it is indeed really easy to prepare!


Thyme, Orange & Chocolate Shortbread

1tbs chopped thyme
50g caster sugar
150g dark chocolate and white chocolate, chopped
250g cake flour
100g self raising flour
finely grated rind of one orange
200g lightly salted butter, diced

Grease two baking sheets.  Reserve 1tsp of thyme, sprinkle the remainder over 25g caster sugar on a chopping board.  Press the thyme into the sugar with a sharp knife.  Meanwhile melt the chocolate in a bowl over a pot with steaming water.  Take care not to let the bowl touch the water!

Sift the flour into a bowl, add the reserved thyme, orange rind and butter.  Rub with your fingers, the mixture should resemble breadcrumbs.

Stir the remaining sugar into the melted chocolate.  Add mixture to the flour until it forms dough.
Shape the dough into a thick log +/- 30cm long.  Roll it in grease proof paper, chill for one hour.

Roll the log in the herb sugar.

Cut into slices, bake approximately 20min or until pale golden brown at 180 degrees Celsius 

This shortbread is delicious, the flavors combine superbly!
Enjoy with strong coffee...
